Tuna Salad with Zucchini & Walnuts Recipe
Sandra
I wasn't sure whether or not to share the recipe for this tuna salad with you, because it's the simplest thing ever, but I've been so obsessed with it recently it would be a crime not to. So, these are the ingredients I put in: romaine lettuce, plum tomatoes, corn, tuna, walnuts and sauted zucchini. I season everything with sunflower oil, balsamic vinegar and salt, but sometimes, if I'm feeling naughty, I also add in a spoon of mayo and sprinkle a little bit of cheese on top. That's it! I told you it's easy... But so, so good! Let me know if you try it.

Stuffed Bell Peppers Recipe
Sandra
Stuffed bell peppers are a thing back in my home country, but we usually prepare and eat them in a tomato sauce, served with mashed potatoes. Now this here, is my London version. I don't know which one I prefer, because they're both yummy in their own way, but the Slovenian version takes about a bajillion years to prepare, so I'm sticking with this one for now.
If you're preparing a meal for two people - or making a double portion to put one in the freezer like I always do - you'll need 2 bell peppers, an onion, 250 g of minced pork/beef, a handful of cous cous, tomato puree, a handful of grated cheese and the general - oil, salt, pepper.
First you'll want to remove bell pepper seeds and cut bell peppers in half. Then sprinkle a little bit of oil on top and put them in the oven on 200°C for 20 minutes. In the mean time, prepare cous cous according to the instructions on the packaging, and in a separate pan, saute diced onion and mix in the meat. Once the meat is cooked, you can add a few squeezes of tomato puree, cooked cous cous, and mix the whole thing together. The last step is to take the bell peppers from the oven to stuff them with the mixture, sprinkle a little cheese on top and put them back in the oven for additional ten minutes before you dig in. Bon appetit!
As always, if you end up making these, don't forget to post it on social media and tag me. I would love to see your creation and hear your thoughts! Also, if you'd prefer a video version of the recipe, check out this vlog of mine. The cooking bit starts at 6:41.

JimJams Cake in a Mug
Sandra
I've been trying to make healthier choices recently and one of them involved me to stop buying chocolate and biscuits for my 'midnight drawer'. Yes, I used to have one. Don't judge. However, I'm still a girl, and that time of the month has to involve sweet treats, otherwise I turn into a monster. So, with no chocolate and biscuits in sight, I had to get a little creative. Thankfully, Pinterest saved me again with its Nutella cake in a mug recipe, but to switch things up I replaced Nutella with JimJams, an equally delicious hazelnut chocolate spread that contains a lot less sugar, is gluten free and even diabetic friendly. I'm a total convert and will definitely be trying out their low sugar jams as well.
For the cake in a mug, you need four ingredients only and three minutes of your time tops. All you need to do is take a mug and mix in 3 tbsp of JimJams Hazelnut Chocolate Spread, 3 tbsp of white flour, 6 tbsp of milk and 1/2 tsp of baking powder. Once your mixture is thoroughly stirred, it can be put in a microwave on full power for a minute a half and that's literally it. Perfect for the days when you need your sugar RIGHT. NOW. Do you have any delicious 'cake in a mug' recipes to share with me?

Branston BBQ Workshop Tex-Mex Chicken Tacos Recipe
Sandra
Right before my trip to Stockholm, I was invited to come along for the Branston BBQ workshop at the London Barbecue school. Branston is a brand I was introduced to ages ago, even before moving to England, where it's a household name. They're famous for their jarred pickled chutney called Pickle, and that's the exact product my mom became obsessed with while living in the UK herself. It was always the first thing on her to-buy list when visiting London, and I remember us always having it in the fridge. When I was younger, it didn't look too appetizing to me, so I actually hadn't tried it up until a few years ago, but once I did, we bonded very quickly.
I now love having it on toast, topped off with a slice of Cheddar cheese, just like the Brits, but it had never crossed my mind to use it in marinades up until the workshop. What an awesome idea! We had quite a few different recipes over there waiting for us to try out. It was very hard to choose 'the one', but I eventually decided to go for the Tex-Mex Chicken Tacos, and they turned out delicious!
To prepare them for four people, you'll first need four chicken breasts sliced in half. Then for the marinade, you mix 1 tbsp of small chunk Branston pickle, 1 tbsp of honey, 1 tbsp of soy sauce, 1 tbsp of olive oil, 1 tbsp of lime juice and grated rind of 1 lime. Once you have that ready, you can add the chicken and put the whole thing in the fridge for at least half an hour.
In the meantime, you can prepare the salad by mixing together 1 large choppped tomato, 3 chopped spring onions, 5 tbsp of kidney beans, 1 peeled and chopped avocado, lime juice from 1/2 of a lime, 1 tbsp of extra virgin olive oil and a hanful of fresh chopped coriander if you're a fan.
Now, after you grill the chicken, all you have to do is chop it into strips, grab some taco shells and fill them with both chicken and salad. Quick and simple! And to make it even more delicious, you can sprinkle some grated cheese on top as well!
As I have said, there were more than plenty of recipes to choose from, so I have some homework to do and try them all, now that I have a cupboard full of amazing Branston products. I think this mushroom & grilled cheese burger muffin with their caramelised red onion relish will be next.

Life is Sweet Sally Lunn French Toast Recipe
Sandra
French toast reminds me of my childhood. My grandma always used to make it for me, and boy did I love it! I still do, which is why it's incredibly strange the last time I ate it was probably ten years ago. When I was browsing through Life is Sweet, the Hummingbird Bakery's new collection of American home-baking recipes, I thought I would have a really hard time choosing which dish to test out first. The selection includes everything from easy classics such as Buttermilk Pancakes to more complicated and sophisticated desserts, arranged in logical categories, making the recipe book super easy to use. There was a number of recipes that caught my attention, and I'll make sure to try them all at some point, but when I stumbled upon the Sally Lunn French Toast, I knew I had a winner.
To make four people very happy first thing in the morning, you'll need 8 thick slices of white bread, 2 large eggs, 115 ml of whole milk, 115 ml of single cream, a pinch of salt, 1 tbsp of caster sugar, 1 tsp of vanilla extract, 1 tsp of ground cinnamon and 30 g of unsalted butter.
You need to whisk everything apart from bread and butter together in one bowl, and then soak the slices of bread with the mixture. Once they get soggy, you melt the butter in a frying pan and cook the slices until golden brown on each side. Super easy and super yummy. I'm for sure making these again very, very soon! How about you? Will you be giving this recipe a go? If you do, don't forget to send me a pic via social media.
P.S. If you're interested in other recipes from this book, you can order it over here on Amazon. It's currently discounted from £20 to only £5.99. Woop woop!

Raw Broccoli Salad Recipe
Sandra
Eating raw brocooli hadn't crossed my mind before trying out this broccoli salad. I just didn't think it would taste nice, and while I still wouldn't pick it up and eat it like an apple, I can assure you it's pretty damn incredible when you chop it up and combine it with some other ingredients. I've been raving about this salad for weeks now and it would be a crime not to share the recipe with you guys as well, so here you go!
To make enough for three people, you'll need one broccoli, a half of a red bell pepper, one half of an apple, less than a handful of pine nuts, a teaspoon of honey, a half of a teaspoon of mustard, olive oil, vinegar, salt, and pepper.
The instructions couldn't be easier. You just cut the broccoli into florets, cut the bell pepper into smaller pieces, slice the apple, and throw everything in a food processor. I usually mix this first and then add the rest of the ingredients before mixing it again. When it comes to olive oil, vinegar, salt and pepper, I didn't put down the exact amounts you need, because you just use these for seasoning and can't really go wrong unless you've never made yourself a salad before.

I love to eat it as a side dish, along with beef quarter pounders, and I always add some plum tomatoes on top, because apparently, I'm obsessed with them. My housemate recently pointed out to me that I somehow manage to sneak them into every single meal, and you know what? I can't even deny it. Yes, I admit, I have an unhealthy a healthy obsession with tomatoes and I'm proud of it, haha!

Apple Tea Cake Recipe
Sandra
When Sainsbury's delivered my groceries the other day and replaced the six eggs I ordered with 18 of them, the first thing that popped into my mind was: 'Well, I'll have to do a lot of baking in the upcoming weeks'. And so I did. Ok, ok, to be completely honest, most of them ended up on my avocado toasts I am currently slightly obsessed with, but I did manage to make a yummy apple tea cake. I've been trying out the recipe for the very first time myself, and I'm glad things turned out the way they were supposed to. As always, you can find the recipe below along with the video.
200 g of plain flour
150 g of icing sugar
50 g of white sugar
4 apples
1/2 a pack of baking powder
200 g of butter
4 eggs
Directions:
First make sure you have two bowls to separate eggs whites from egg yolks. Once you have them separated, start beating the egg whites into snow. I highly suggest you to go buy an electrical mixer in case you don't have one, because I was doing it the old fashion way and my arm almost fell off. Anyway, half way through, add 50 g of white (or brown) sugar into that same bowl and keep on beating until you get a creamy consistency.
In another bowl, beat the egg yolks, add 200 g of butter and 150 g of icing sugar. Mix everything together (I used a fork) and then add 200 g of plain flour, half a pack of baking powder and the snow from bowl number one. This is when you'll have to get your hands dirty in order to mix together everything into one sticky but delicious mess. And yes, I did eat some before I poured the mixture into a baking dish, haha. Once it's in there, spread it evenly.
Now peel the apples, remove the seeds and grate them. The apples, not the seeds, obviously. Once you're done, sprinkle the apples on top of the batter, heat the oven to 180/200°C, and pop the dish in there for about 45 minutes. When you take it out, you can also sprinkle some icing sugar on top for an even sweeter taste and more calories. Enjoy!

Creamy Shrimp Sauce Pasta Recipe
Sandra
Today I'll not only tell you how to make one of my all time favourite dishes - pasta with a delicious creamy shrimp sauce - but also show you! I finally managed to put together my first cooking video and I really hope you'll like it. I have a written version of the recipe down below as well in case you prefer it.
Ingredients (serves 2 people):
2 cups of pasta
a half of an onion
3 cloves of garlic
a handful of parsley
200 g of cooked & peeled shrimps (not frozen)
150 ml of single/double cream
oil
salt
Directions:
First, bring a pot of water to boil, slightly salt it and cook the pasta. While the pasta is being cooked, which usually takes about ten minutes, chop the onion, garlic and parsley. Once you have everything ready, pour some oil into a pan, heat it up and throw in the onion. Let the onion cook for a few minutes until it gets yellow-ish and don't forget to do some stirring on the meantime. Next, add the shrimps, garlic and parsley. Once again, leave the whole thing to cook for a few minutes before adding the cream and leaving the sauce to cook for additional five to ten minutes. Oh, and don't forget to add a little bit of salt for a better taste! When the sauce is all done, drain the pasta, put it on a plate and pour the sauce over. A few minutes later, you will be in heaven. I promise.
And there you have it, another delicious, quick-and-easy-to-make meal. Don't forget to watch the video below to see the recipe in action and let me know if you would like to see more cooking videos in the future. Also, if you decide to try out the recipe yourself, please send me photos, as I would love to see your creations!

Recipe: My Dad's Shrimps
Sandra
Now that I'm about to move to London, I'm frantically trying to learn how to cook all the dishes I regularly devour, but never actually prepare myself. The first on the list were my dad's shrimps, which are to die for! Finger-lickable is the expression that best describes them. Everyone who tries them becomes obsessed with them. For some reason, I thought they were very complicated to prepare, so I always avoided the kitchen when my dad was making them, but boy, was I wrong. This is literally the easiest dish ever. It requires the sandwich-making level skills, yet tastes like something you would eat in a 5-star restaurant by the ocean.
The ingredients you need to prepare the dish for four to five people are:
♥ 1 kg of cooked shrimps
♥ 2 bulbs of garlic
♥ a handful of parsley
♥ 1 table spoon of mixed provencal herbs (savory, thyme, rosemary, oregano, marjoram, fennel)
♥ 1 table spoon of Začinka spice mix (to find a similar product in your country, see how it looks like & what it contains here)
♥ olive oil
♥ 2 dl of dry white wine
♥ a half of lime
♥ ground pepper
Directions:
First, you'll have to chop up the garlic and the parsley into tiny pieces. Once you're done, you put them together into a bowl, add the mix of provencal herbs, the začinka spice mix, a few spoons of olive oil, and mix everything together. The mix shouldn't be dry, but it also isn't supposed to be overflowing with oil.
Then you put the mix aside and pour olive oil into a large skillet, so that the bottom is covered. If you'll be preparing shrimps for one or two people, a large skillet will do, but you'll either need an electric pizza pan or do several rounds to prepare the meal for a larger amount of people. We prepare the dish in a large eletric pizza pan.
After you cover the bottom with the oil, you throw in the shrimps. Make sure they aren't frozen, but cooked and previously stored in a fridge. You leave the shrimps to roast for about five minutes until they are done on both sides. Of course, you'll have to do some stirring in between.
Next, you add 2 dl of dry white wine, cover the skillet/pizza pan with a lid and leave the shrimps to stew for about five minutes before you take the lid off and leave the wine to evaporate.
Lastly, you throw the mix that you have previously prepared on the shrimps, squeeze on a half of lime, season the whole thing with ground pepper, stir and that's pretty much it. Just leave the shrimps in the pan for two more minutes, so that they soak up all the ingredients. Easy, right? Will any of you be trying out my dad's recipe? Please send me photos if you do and don't forget to tell me how you liked it.
P.S. Before you shove the shrimps into your mouth, make sure to remove the head, the tail and the shell around the body. Oh, and prepare lots of napkins, because your hands WILL get dirty. :D

Fried Rice a la Sandra Recipe
Sandra
I've been promising you to publish my first ever cooking video to show you how I make the fried rice dish everyone in my family is obsessed with, but unfortunatelly, my video disappeared. I mean, it got deleted from the camera. Accidentally. By my dad. Thanks, dad.
I was thinking about re-filming it, but I need an extra pair of hands to do that, so instead of waiting for my sister to be avaliable again, I decided to just publish the recipe without the video this time. I hope you don't mind!
♥ 3 cups of rice
♥ half a pack of frozen carrots
♥ half a pack of frozen peas
♥ 500 g of chopped chicken fillets
♥ 1 onion
♥ 3 cloves of garlic
♥ 3 eggs
♥ some oil
♥ soy sauce
Directions:
The first thing I do is cook the chicken on some oil. In the mean time, I cook all the frozen vegetables in a pot of boiled water for about ten minutes, chop the onion, mince the garlic, and start cooking the rice according to the directions on the packaging. When the chicken fillets are ready, I take them out of the pan, put them on a plate and throw the onion and the garlic in the same pan, using the leftover oil. Then I wait for a few minutes so that the onion starts looking a bit yellow, and then I add cooked carrots and peas. After a few minutes, I put in the chicken and the eggs, and I start stirring so that the eggs get scrambled. Then the only thing you need to do is toss in the rice, mix well, and add some soy sauce over the top. I use the Indonesian style one from Vitasia that I buy at Lidl, and it's the bomb! Ohh, and you can also leave the dish cook for extra two minutes to get the rice 'fried'.
So, how many of you will be trying out my recipe? Would you still like to see a cooking video from me or do you prefer written recipes?

Banana Muffins With a Twist Recipe
Sandra
Last week, on the 25th of March, it was Mother's Day in my country. I was planning to go buy some chocolate and flowers for my mom, but because I got snowed in, I had to come up with something else. The first thing that popped into my head were muffins and when I figured out that I had all the ingredients I needed at home, it was time for the next step - baking!
Muffins are the easiest pastry you can make, as you literally just throw all the ingredients together and put the mixture into an oven. For these muffins I used: 220 g of white flour, 70 g of sugar, 2 tsp of baking powder, 1/4 tsp of salt, 1 beaten egg, 1/2 dl of milk, 1/2 dl of oil, 2 ripe mashed bananas, 50 g of chocolate chips, and 50 g of diced walnuts.
I first gathered all the ingredients and then put flour, sugar, baking powder and salt in one big bowl. In another other bowl, I combined a beaten egg, milk, oil, bananas, chocolate chips and walnuts, and then threw this mixture into the first, bigger bowl. After I thoroughly mixed everything together with a spoon, I scooped the mixture into a muffin tray and baked on 190°C for 20 minutes. The muffins turned out super delicious! Will you try making these as well?

My First Successful Cupcakes Recipe
Sandra
I have another recipe for you guys! I've been baking some cupcakes on Sunday and was really surprised at how well they turned out. I was trying to make them for the first time a few years ago, and well, the whole thing ended up being a complete disaster, so I was a bit nervous about this second attempt. I'm so proud they weren't gooey + burnt at the same time, which is something that happened last time... :D
I got the original recipe here on bakingmad.com, where you can find lots of amazing recipes for cupcakes as well as for other things, but I had to make some changes to the recipe because I couldn't find some of the ingredients at my local store. Instead of golden caster sugar I used plain white sugar and instead of white wine vinegar, I put in apple vinegar. Buttermilk was also nowhere to be found where I live, so I asked uncle Google to help me out. He suggested that I should mix a spoon of lemon juice with a cup of normal milk and let the mixture sit for 5 minutes. I was very worried that this wouldn't work, but my cupcakes ended up being totally delicious, so don't worry if you can't find any buttermilk yourself.
P.S. If you're a newbie when it comes to making cupcakes, you can also watch a video on how to make cupcakes on the bakingmad site.
Now, I have a surprise for you! One of you can win these two cookbooks that you see in the photo above. The only thing you have to do is be my visible follower either on GFC, Facebook or bloglovin', and leave me a comment below this post with your e-mail address. Good luck! The giveaway closes on March 6.

Chicken & Vegetable Chow Mein Recipe
Sandra
Chinese noodles (also known as chow mein) with chicken and veggies are one of my favorite dishes. Whenever I go to a Chinese restaurant, this is what ends up on my table. And some spring rolls, of course. I've never actually made this dish at home before, but when my dad mistakenly bought a bag of frozen Chinese veggies, I decided to finally dig up some chow mein noodles I bought months ago from our pantry, and get cookin'!
I had no idea how this would turn out, but it was actually quite good. Just beware: you need to add a lot more veggies than noodles, otherwise it can all get a bit dry. I was actually afraid that I won't have enough noodles for the four of us, but they kind of magically trippled when I put them in some boiled water, and a meal for two quickly became a meal for six. I am not kidding.
I didn't use any particular recipes, so this recipe post might not be the most useful one when it comes to measurments, but I'm sure you'll have no problem re-creating it, as this is one of the easiest dishes to make. The only things you need are chow mein noodles, chicken, a few eggs, oil and some Oriental style veggies - mine were frozen and called Green Grocer's Seasoned Mixed Oriental Style Vegetables. I think my dad got them at Lidl.
Anyway, I first put the vegetable mix into a wok and waited for my veggies to get cooked, which lasted about 15 minutes. When all the water from the vegetables evaporated, I added a few eggs, stirred and waited a few more minutes for the eggs to become fried ( scrambled?). Then, I put the dish aside and prepared chicken by putting little diced pieces in a skillet and stir-frying them on some oil. In the mean time, I put the noodles in a pot of water, boiled them and let them cook for about 3 minutes. After the noodles were done, I strained them, put them in the wok with veggies and added chicken. Then I mixed everything together, let the whole thing stir-fry for a bit and voila! That was it!
P.S. I didn't use any salt, because both noodles and seasoned veggies already contained some!

Pasta Salad Recipe
Sandra
I made this pasta salad a while ago, but I totally forgot the post the promised recipe. Sorry! Like all my recipes, the salad is very easy to make, and is great for busy people who don't have time to cook, as you can just throw all the ingridients in the bowl and eat it straight away or take it with you to work!
To make the salad, I have used 200 g of pasta, a few tomatoes, some pickles, 2 spoons of sour cream, and two spoons of mayonnaise. You can of course add other things as well, but these ingredients were more than enough for me. We were eating this salad for at least three days! Well, I was. :D

Octopus Salad Recipe
Sandra
Octopus salad is one of my favorite summer dishes. My father sometimes makes it for dinner, so I decided to watch him preparing it the other day in order to write down the recipe and share it with you. :)
INGREDIENTS
♥ defrosted octopus (2 kg)
♥ 3 dl of dry white wine
♥ 1 dl of balsamic vinegar
♥ 1 tomato
♥ 2 onions
♥ 1 lemon
♥ 2 garlics
♥ a teaspoon of ungrouned black pepper
♥ 4 bay leaves
♥ 1 dl of olive oil
♥ parsley
♥ 1 carrot
♥ 1 celery twing
♥ 5 corks
♥ water
♥ 25 dag of cherry tomatoes
♥ olives
HOW TO DO IT
The first thing you're gonna need is an octpus. Obviously. The one that my father used weighted about 2 kg. After washing it and removing all the inedible parts, you'll have to put it in a big pot and then add: 2 dl of dry white wine, 0.5 dl of balsamic vinegar, one tomato cut in half, an onion cut in half, lemon juice (1/2 lemon), one small garlic - peeled but not minced or chopped, a teaspoon of black pepper, 4 bay leaves, 0.5 dl of olive oil, some parsley, a carrot cut in half lengthways, a celery twig, 5 corks, and enough warm water to cover everything you've just put in. After you've put all of these things in a pot, boil the mixture and then cook it for another hour and 15 minutes. When the cooking is done, take out the octopus and let it strain until it gets cold.
When the octopus is all cooled down, cut it on little pieces and put them in a salad bowl. Then also add: lemon juice (1/2 lemon), 1 dl of wine, 0.5 dl of balsamic vinnegar, 25 dag of cherry tomatoes cut in half, one diced onion, some ground pepper, 0.5 dl of olive oil, a handful of olives, one finely chopped garlic and a handful of finely chopped parsley. That's it! Now put it in a fridge for a day or so and then eat it! So, how do you like the recipe? Will you be trying it out or are you maybe not a big fan of octopus?

Tzatziki Recipe
Sandra
If you've ever been to Greece, you'll know that Greeks have good food. One of their traditional starters, which I eat all the time when I'm in Greece, is tzatziki, a sauce/dip that is usually eaten with bread. It's really easy to make it, so I thought I would share it with you.
INGREDIENTS:
♥ 2 cups of Greek yogurt
♥ 1 cup of grated cucumber
♥ 2 tablespoons of dill (or pre-packed mix of tzatziki spices)
♥ 2 tablespoons of lemon juice
♥ 2 minced garlic cloves
♥ 1 tablespoon of olive oil
♥ a bit of salt & pepper for better taste
HOW TO DO IT
Just mix everything together and put it in a fridge for a couple of hours and you're done! I promise you'll like it. Even Benji thinks it's delicious. ;)

Zucchini Boats Recipe
Sandra
The other day, I decided to make some meatless zucchini boats for lunch. It was my first time making these and I didn't even have a recipe, so I was really surprised when they turned out to be super yummy. If you want to know how I made them, keep reading this post.
INGREDIENTS (for 8 boats):
♥ 4 zucchinis
♥ 2 tomatos
♥ 1 large can of mushrooms
♥ 4 carrots
♥ 3 bell peppers
♥ 1 onion
♥ 5 cloves of garlic
♥ a handful of parsley
♥ a bag of grated cheese
♥ 1 vegetable stock cube
♥ salt
♥ oil
HOW TO DO IT
Firstly, I chopped/sliced the tomatos, mushrooms, carrots, bell peppers, garlic and parsley, and put them all in a big bowl. Then I diced an onion, and put a pan with some oil on the stove, waiting for the oil to warm up.
After the oil was ready, I tossed in the chopped onion and then the rest of the vegetables after the onion started to look yellowish. At the same time, I also added a vegetable stock cube and some salt. I left the vegetable mix cooking for about 45 minutes. In the meantime, I prepared the zucchinis by removing the seeds and then cooking them in boiled and salted water for about 10 minutes. After the zucchinis and the vegetable mix were done, I put the zucchinis on a baking sheet and filled them with the vegetables and some grated cheese. Then I put them in the oven for 30 minutes and that's pretty much it!
Sooo... will any of you be trying out my recipe? :D
