Octopus Salad Recipe

Octopus salad is one of my favorite summer dishes. My father sometimes makes it for dinner, so I decided to watch him preparing it the other day in order to write down the recipe and share it with you. :)
INGREDIENTS
♥ defrosted octopus (2 kg)
♥ 3 dl of dry white wine
♥ 1 dl of balsamic vinegar
♥ 1 tomato
♥ 2 onions
♥ 1 lemon
♥ 2 garlics
♥ a teaspoon of ungrouned black pepper
♥ 4 bay leaves
♥ 1 dl of olive oil
♥ parsley
♥ 1 carrot
♥ 1 celery twing
♥ 5 corks
♥ water
♥ 25 dag of cherry tomatoes
♥ olives
HOW TO DO IT
The first thing you're gonna need is an octpus. Obviously. The one that my father used weighted about 2 kg. After washing it and removing all the inedible parts, you'll have to put it in a big pot and then add: 2 dl of dry white wine, 0.5 dl of balsamic vinegar, one tomato cut in half, an onion cut in half, lemon juice (1/2 lemon), one small garlic - peeled but not minced or chopped, a teaspoon of black pepper, 4 bay leaves, 0.5 dl of olive oil, some parsley, a carrot cut in half lengthways, a celery twig, 5 corks, and enough warm water to cover everything you've just put in. After you've put all of these things in a pot, boil the mixture and then cook it for another hour and 15 minutes. When the cooking is done, take out the octopus and let it strain until it gets cold.
When the octopus is all cooled down, cut it on little pieces and put them in a salad bowl. Then also add: lemon juice (1/2 lemon), 1 dl of wine, 0.5 dl of balsamic vinnegar, 25 dag of cherry tomatoes cut in half, one diced onion, some ground pepper, 0.5 dl of olive oil, a handful of olives, one finely chopped garlic and a handful of finely chopped parsley. That's it! Now put it in a fridge for a day or so and then eat it! So, how do you like the recipe? Will you be trying it out or are you maybe not a big fan of octopus?
