Today on the Menu: Veggie Melts

I did these veggie melts for lunch today, and they're so yummy that I just have to share the recipe with you.
WHAT YOU NEED (for 4 persons):
○ 1 small head of broccoli
○ 1 tablespoon of olive oil
○ A little bit of salt and ground pepper
○ About 4 button mushrooms
○ About 2 red, yellow or green peppers
○ 1/4 cup of mayonnaise
○ 1 small garlic clove, crushed through a press
○ French bread
○ A (small) bag of grated cheese
HOW TO DO IT:
First, remove stems, ribs and seeds from all vegetables and cut them on small pieces.

Put baking sheet in the oven dish and then toss in broccoli with oil. Season with salt and pepper. Broil on 180° for about 5 minutes, tossing once or twice, until broccoli begins to char.
Then add mushrooms and peppers to sheet and season with salt and pepper. Broil on 180° for about 10 more minutes, tossing once or twice, until vegetables are tender. Then put the dish out of the oven and toss all the vegetables on a big plate.
In a small bowl, combine mayonnaise and garlic. Season with salt and pepper. Cut bread and place it on a dish you were using before. Spread bread with mayonnaise mixture and top it with vegetables and cheese. Put the dish back into the oven and broil on 180° for about 5 minutes until cheese is melted and lightly browned. Now, enjoy your meal! :)
I served the melts with some cherry tomatoes and mozzarella cheese.
