Tuna Salad with Zucchini & Walnuts Recipe

I wasn't sure whether or not to share the recipe for this tuna salad with you, because it's the simplest thing ever, but I've been so obsessed with it recently it would be a crime not to. So, these are the ingredients I put in: romaine lettuce, plum tomatoes, corn, tuna, walnuts and sauted zucchini. I season everything with sunflower oil, balsamic vinegar and salt, but sometimes, if I'm feeling naughty, I also add in a spoon of mayo and sprinkle a little bit of cheese on top. That's it! I told you it's easy... But so, so good! Let me know if you try it. 

Zucchini Boats Recipe

The other day, I decided to make some meatless zucchini boats for lunch. It was my first time making these and I didn't even have a recipe, so I was really surprised when they turned out to be super yummy. If you want to know how I made them, keep reading this post.


INGREDIENTS (for 8 boats):
♥ 4 zucchinis
♥ 2 tomatos
♥ 1 large can of mushrooms
♥ 4 carrots
♥ 3 bell peppers
♥ 1 onion
♥ 5 cloves of garlic
♥ a handful of parsley
♥ a bag of grated cheese
♥ 1 vegetable stock cube
♥ salt
♥ oil

HOW TO DO IT
Firstly, I chopped/sliced the tomatos, mushrooms, carrots, bell peppers, garlic and parsley, and put them all in a big bowl. Then I diced an onion, and put a pan with some oil on the stove, waiting for the oil to warm up. 

After the oil was ready, I tossed in the chopped onion and then the rest of the vegetables after the onion started to look yellowish. At the same time, I also added a vegetable stock cube and some salt. I left the vegetable mix cooking for about 45 minutes. In the meantime, I prepared the zucchinis by removing the seeds and then cooking them in boiled and salted water for about 10 minutes. After the zucchinis and the vegetable mix were done, I put the zucchinis on a baking sheet and filled them with the vegetables and some grated cheese. Then I put them in the oven for 30 minutes and that's pretty much it!
