JimJams Cake in a Mug

I've been trying to make healthier choices recently and one of them involved me to stop buying chocolate and biscuits for my 'midnight drawer'. Yes, I used to have one. Don't judge. However, I'm still a girl, and that time of the month has to involve sweet treats, otherwise I turn into a monster. So, with no chocolate and biscuits in sight, I had to get a little creative. Thankfully, Pinterest saved me again with its Nutella cake in a mug recipe, but to switch things up I replaced Nutella with JimJams, an equally delicious hazelnut chocolate spread that contains a lot less sugar, is gluten free and even diabetic friendly. I'm a total convert and will definitely be trying out their low sugar jams as well.
For the cake in a mug, you need four ingredients only and three minutes of your time tops. All you need to do is take a mug and mix in 3 tbsp of JimJams Hazelnut Chocolate Spread, 3 tbsp of white flour, 6 tbsp of milk and 1/2 tsp of baking powder. Once your mixture is thoroughly stirred, it can be put in a microwave on full power for a minute a half and that's literally it. Perfect for the days when you need your sugar RIGHT. NOW. Life is Sweet Sally Lunn French Toast Recipe

French toast reminds me of my childhood. My grandma always used to make it for me, and boy did I love it! I still do, which is why it's incredibly strange the last time I ate it was probably ten years ago. When I was browsing through Life is Sweet, the Hummingbird Bakery's new collection of American home-baking recipes, I thought I would have a really hard time choosing which dish to test out first. The selection includes everything from easy classics such as Buttermilk Pancakes to more complicated and sophisticated desserts, arranged in logical categories, making the recipe book super easy to use. There was a number of recipes that caught my attention, and I'll make sure to try them all at some point, but when I stumbled upon the Sally Lunn French Toast, I knew I had a winner.
To make four people very happy first thing in the morning, you'll need 8 thick slices of white bread, 2 large eggs, 115 ml of whole milk, 115 ml of single cream, a pinch of salt, 1 tbsp of caster sugar, 1 tsp of vanilla extract, 1 tsp of ground cinnamon and 30 g of unsalted butter.
You need to whisk everything apart from bread and butter together in one bowl, and then soak the slices of bread with the mixture. Once they get soggy, you melt the butter in a frying pan and cook the slices until golden brown on each side. Super easy and super yummy. I'm for sure making these again very, very soon! Raw Broccoli Salad Recipe

Eating raw brocooli hadn't crossed my mind before trying out this broccoli salad. I just didn't think it would taste nice, and while I still wouldn't pick it up and eat it like an apple, I can assure you it's pretty damn incredible when you chop it up and combine it with some other ingredients. I've been raving about this salad for weeks now and it would be a crime not to share the recipe with you guys as well, so here you go!
To make enough for three people, you'll need one broccoli, a half of a red bell pepper, one half of an apple, less than a handful of pine nuts, a teaspoon of honey, a half of a teaspoon of mustard, olive oil, vinegar, salt, and pepper.
The instructions couldn't be easier. You just cut the broccoli into florets, cut the bell pepper into smaller pieces, slice the apple, and throw everything in a food processor. I usually mix this first and then add the rest of the ingredients before mixing it again. When it comes to olive oil, vinegar, salt and pepper, I didn't put down the exact amounts you need, because you just use these for seasoning and can't really go wrong unless you've never made yourself a salad before.

Yes, I admit, I have an unhealthy a healthy obsession with tomatoes and I'm proud of it, haha!

Apple Tea Cake Recipe

When Sainsbury's delivered my groceries the other day and replaced the six eggs I ordered with 18 of them, the first thing that popped into my mind was: 'Well, I'll have to do a lot of baking in the upcoming weeks'. And so I did. Ok, ok, to be completely honest, most of them ended up on my avocado toasts I am currently slightly obsessed with, but I did manage to make a yummy apple tea cake. I've been trying out the recipe for the very first time myself, and I'm glad things turned out the way they were supposed to. As always, you can find the recipe below along with the video.
200 g of plain flour
150 g of icing sugar
50 g of white sugar
4 apples
1/2 a pack of baking powder
200 g of butter
4 eggs
Directions:
First make sure you have two bowls to separate eggs whites from egg yolks. Once you have them separated, start beating the egg whites into snow. I highly suggest you to go buy an electrical mixer in case you don't have one, because I was doing it the old fashion way and my arm almost fell off. Anyway, half way through, add 50 g of white (or brown) sugar into that same bowl and keep on beating until you get a creamy consistency.
In another bowl, beat the egg yolks, add 200 g of butter and 150 g of icing sugar. Mix everything together (I used a fork) and then add 200 g of plain flour, half a pack of baking powder and the snow from bowl number one. This is when you'll have to get your hands dirty in order to mix together everything into one sticky but delicious mess. And yes, I did eat some before I poured the mixture into a baking dish, haha. Once it's in there, spread it evenly.
Now peel the apples, remove the seeds and grate them. The apples, not the seeds, obviously. Once you're done, sprinkle the apples on top of the batter, heat the oven to 180/200°C, and pop the dish in there for about 45 minutes. When you take it out, you can also sprinkle some icing sugar on top for an even sweeter taste and more calories. Enjoy!

Creamy Shrimp Sauce Pasta Recipe

Today I'll not only tell you how to make one of my all time favourite dishes - pasta with a delicious creamy shrimp sauce - but also show you! I finally managed to put together my first cooking video and I really hope you'll like it. I have a written version of the recipe down below as well in case you prefer it.
Ingredients (serves 2 people):
2 cups of pasta
a half of an onion
3 cloves of garlic
a handful of parsley
200 g of cooked & peeled shrimps (not frozen)
150 ml of single/double cream
oil
salt
Directions:
First, bring a pot of water to boil, slightly salt it and cook the pasta. While the pasta is being cooked, which usually takes about ten minutes, chop the onion, garlic and parsley. Once you have everything ready, pour some oil into a pan, heat it up and throw in the onion. Let the onion cook for a few minutes until it gets yellow-ish and don't forget to do some stirring on the meantime. Next, add the shrimps, garlic and parsley. Once again, leave the whole thing to cook for a few minutes before adding the cream and leaving the sauce to cook for additional five to ten minutes. Oh, and don't forget to add a little bit of salt for a better taste! When the sauce is all done, drain the pasta, put it on a plate and pour the sauce over. A few minutes later, you will be in heaven. I promise.

Recipe: My Dad's Shrimps

Now that I'm about to move to London, I'm frantically trying to learn how to cook all the dishes I regularly devour, but never actually prepare myself. The first on the list were my dad's shrimps, which are to die for! Finger-lickable is the expression that best describes them. Everyone who tries them becomes obsessed with them. For some reason, I thought they were very complicated to prepare, so I always avoided the kitchen when my dad was making them, but boy, was I wrong. This is literally the easiest dish ever. It requires the sandwich-making level skills, yet tastes like something you would eat in a 5-star restaurant by the ocean.
The ingredients you need to prepare the dish for four to five people are:
♥ 1 kg of cooked shrimps
♥ 2 bulbs of garlic
♥ a handful of parsley
♥ 1 table spoon of mixed provencal herbs (savory, thyme, rosemary, oregano, marjoram, fennel)
♥ 1 table spoon of Začinka spice mix (to find a similar product in your country, see how it looks like & what it contains here)
♥ olive oil
♥ 2 dl of dry white wine
♥ a half of lime
♥ ground pepper
Directions:
First, you'll have to chop up the garlic and the parsley into tiny pieces. Once you're done, you put them together into a bowl, add the mix of provencal herbs, the začinka spice mix, a few spoons of olive oil, and mix everything together. The mix shouldn't be dry, but it also isn't supposed to be overflowing with oil.
Then you put the mix aside and pour olive oil into a large skillet, so that the bottom is covered. If you'll be preparing shrimps for one or two people, a large skillet will do, but you'll either need an electric pizza pan or do several rounds to prepare the meal for a larger amount of people. We prepare the dish in a large eletric pizza pan.
After you cover the bottom with the oil, you throw in the shrimps. Make sure they aren't frozen, but cooked and previously stored in a fridge. You leave the shrimps to roast for about five minutes until they are done on both sides. Of course, you'll have to do some stirring in between.
Next, you add 2 dl of dry white wine, cover the skillet/pizza pan with a lid and leave the shrimps to stew for about five minutes before you take the lid off and leave the wine to evaporate.
Lastly, you throw the mix that you have previously prepared on the shrimps, squeeze on a half of lime, season the whole thing with ground pepper, stir and that's pretty much it. Just leave the shrimps in the pan for two more minutes, so that they soak up all the ingredients. Easy, right? Will any of you be trying out my dad's recipe? P.S. Before you shove the shrimps into your mouth, make sure to remove the head, the tail and the shell around the body. Oh, and prepare lots of napkins, because your hands WILL get dirty. :D
